Happy Arrowstreet-ers at our Vegetarian Potluck to promote sustainable choices.

As a part of our Earth Month celebration, Arrowstreet’s staff gathered in the kitchen to enjoy a vegetarian potluck and traded ideas incorporating more vegetables in our daily meal plans. The impressive array of dishes included Vegetarian Gumbo and African Peanut Soup; there was something for everyone.

As the line to sample dishes extended down the hall, Kate Bubriski and Pat Cornelison explained the environmental benefits of eating meat-free meals, and recommended the book “Diet for a Small Planet,” by Frances Moore Lappe, for those wanting to learn more.

After a satisfying lunch, everyone voted for their favorite dish. Kate Bubriski’s delicious Soba Noodle Salad was declared our winner, with Amrata’s Indian Vegan Chili Sliders and Jody’s Lettuce Wraps taking home 2nd and 3rd place. Our staff left lunch with full bellies, and a few new recipes. We are all looking forward to the next vegetarian potluck, but until then, we’ll be trying some of these dishes at home!
