With Earth Month in full swing at Arrowstreet we decided to tread a little more gently on Mother Earth, by way of our plates. We hosted a Vegetarian Potluck to bring awareness to how what we eat impacts a number of environmental issues and how we can preserve our precious planet for generations to come.

Here are 5 tips to try:

  • Eat more plants
  • Eat more whole, minimally processed foods
  • Cut down food waste
  • Grow some food
  • Buy more locally

With fourteen unique, tasty and strictly vegetarian (or vegan) dishes to try, it was difficult to choose one dish to be the winner. By popular vote, Donald’s Vegan Mongolian Barbeque took home the 1st Place prize. Following closely behind in 2nd Place was Jillian’s Homemade Cheese Stuffed Tortellini with Roasted Veggies in Chardonnay Sauce. Paul’s Baked Mac & Cheese with Jalapenos scored the 3rd Place prize.

From appetizers (Spinach dip), breakfast treats (vegan doughnuts), salads (Insalata di Finocchio, Arroz Feta), and desserts (Coconut Macaroons, Dirt) we were treated to a Vegetarian Feast!
